Bananas, my all time favorite fruit! (just not the end bits, but that’s a whole other story)

So what do you do when your bananas ripen faster than you can eat them? Banana Bread of course! Well, banana walnut bread to be exact, but if you don’t like nuts, just don’t add them.


Banana walnut bread or muffins


– 4 ripe bananas

– 1/3c butter, melted

– 1c granulated sugar

– 1 egg, beaten

– 1tsp vanilla

– 1tsp baking soda

– pinch or 2 of salt

– 1.5c all purpose flour

– .5c – 1c of walnuts (or nut of choice) if desired, roasted & chopped


– preheat oven to 350

– peel your bananas, put them into a large mixing bowl  & mash them to a paste with a fork or wooden spoon

– stir in melted butter

– stir in sugar, egg & vanilla

– stir in baking soda & salt

– add flour & mix until well incorporated

– gently stir in nuts (if adding)

– pour into a buttered 4x8in loaf pan or buttered muffin tin

-bake for approx 1hr for loaf pan, 25-35 min for muffin tin

– cool on rack, remove from pan & enjoy!
