Chocolate Velvet Cupcakes

We celebrated my darling husband’s birthday recently & almost every year I make him the same cupcakes. They’re his favorite, so why not? Luckily for the both of us though, every year they get better! They started as red velvet, but over the years we decided the food coloring was just unnecessary..and maybe added a little more chocolate 🙂

I started using a recipe that was very similar to the one you can find on

Here’s what I use:

– 2.5c All Purpose flour

– 2c sugar

– .75c cocoa powder

– .5tsp salt

– 1tsp baking soda

– 1tsp baking powder

– 2 sticks butter (room temp)

– 5 large eggs (not ice cold)

– 1c buttermilk

– 1.5tsp vanilla

Preheat your oven to 350

– measure out your dry ingredients & sift 3 times. (is it entirely necessary to sift 3 times? maybe not, but I do it! why take a chance on not having the fluffiest cupcakes possible??)



– cream together butter & sugar until light and fluffy

– add eggs, one at a time, making sure to beat well & scrape sides between each addition

– slowly add sifted dry ingredients .25 at a time alternating with the buttermilk, also .25 at a time.


– after you’ve added the last of the buttermilk, scrape the sides & bottom again, add the vanilla (and food coloring if you choose to use it) and give it one last mix

– line your cupcake pan & fill half full

– bake @350 for 16-20min (mine never go the full 20min, but it all depends on your oven!)


– let sit in the pan 5min then remove to cool completely



– frost with your favorite flavor icing (or don’t… I think they’re perfect as is, but I’ve never been the biggest icing fan.)
